Vegan Banana Baked Oatmeal

This vegan banana baked oatmeal makes for a healthy snack or an incredible breakfast that will fill you up and keep you satisfied all morning. It’s an easy recipe that combines blueberries, coconut flakes, chocolate chips and cinnamon. You can easily make a big batch over the weekend and enjoy it for several days. It reheats well or you can serve it chilled.

This baked oatmeal recipe takes less than an hour and uses only natural sweeteners. There are no added sugars, and we need only a few drops of oil to grease the pan. This nutritious breakfast is gluten-free, egg-free and dairy-free, and it stores well in the refrigerator for up to seven days.

We’ll first mash the bananas, then add all the wet ingredients and mix it together. We’ll then add the dry ingredients, combine everything together, and bake it for 45 minutes. Finally, we’ll allow the oatmeal to cool down and then serve it either warm or chilled. Feel free to use your choice of berries; it will come out just as great. I have suggested a few of my favorite toppings below, but feel free to substitute these with your choices of toppings and/or syrups.

Vegan Banana Baked Oatmeal
Ingredients
- ½ tsp Oil for brushing
- 2 Bananas mashed
- 14 oz Plant-Based Milk soy, almond, or oat
- ¼ cup Maple Syrup
- 1 tbsp Vanilla Extract
- ½ cup Blueberries
- 2 cups Old-Fashioned Rolled Oats
- 2 tbsp Coconut Flakes
- ¼ cup Chocolate Chips
- 1 tsp Baking Powder
- 1½ tsp Cinnamon Powder
- ½ tsp Salt
Possible Toppings
- Banana Slices
- Blueberries
- a drizzle Peanut Butter
- a drizzle Maple Syrup
- a drizzle Almond Butter
Instructions
- Preheat the oven to 375 F.
- Grease a 9 x 9 baking pan with oil. Add peeled bananas and mash them.
- Add milk, maple syrup, vanilla extract, and blueberries. Mix together well.
- Add oats, coconut flakes, chocolate chips, baking powder, cinnamon powder and salt. Mix everything together evenly.
- Bake for 45 minutes, then remove pan from oven. Allow pan to cool down for a few minutes.
- Cut baked oatmeal into slices, add desired toppings, and serve either warm or cold.
