Vegan Banana Baked Oatmeal

This vegan banana baked oatmeal makes for a healthy snack or an incredible breakfast that will fill you up and keep you satisfied all morning. It’s an easy recipe that combines blueberries, coconut flakes, chocolate chips and cinnamon.

Ingredients
  

  • ½ tsp Oil for brushing
  • 2 Bananas mashed
  • 14 oz Plant-Based Milk soy, almond, or oat
  • ¼ cup Maple Syrup
  • 1 tbsp Vanilla Extract
  • ½ cup Blueberries
  • 2 cups Old-Fashioned Rolled Oats
  • 2 tbsp Coconut Flakes
  • ¼ cup Chocolate Chips
  • 1 tsp Baking Powder
  • tsp Cinnamon Powder
  • ½ tsp Salt

Possible Toppings

  • Banana Slices
  • Blueberries
  • a drizzle Peanut Butter
  • a drizzle Maple Syrup
  • a drizzle Almond Butter

Instructions
 

  • Preheat the oven to 375 F.
  • Grease a 9 x 9 baking pan with oil. Add peeled bananas and mash them.
  • Add milk, maple syrup, vanilla extract, and blueberries. Mix together well.
  • Add oats, coconut flakes, chocolate chips, baking powder, cinnamon powder and salt. Mix everything together evenly.
  • Bake for 45 minutes, then remove pan from oven. Allow pan to cool down for a few minutes.
  • Cut baked oatmeal into slices, add desired toppings, and serve either warm or cold.

Notes

Refrigerates up to 7 days.
Some new ovens have very high intense heat. Check periodically that oatmeal doesn't burn.
