The Best Avocado Salad

The first time I made this recipe was for my mother. She loves avocado but is not a fan of salads. I will always remember how much she loved this at first bite. Now, every time that I visit her, she requests that I make it. I am not exaggerating when I state that she is in love with this salad. This avocado salad stands out through its balanced flavors and textures. From creamy avocado to crunchy cucumber and juicy cherry tomatoes, it is a delectably simple dish brought together through a vibrant, light and citrusy vinaigrette.

The Best Avocado Salad
Ingredients
- 2 medium Avocados chopped
- 1 cup Cucumber diced
- 1 cup Cherry Tomatoes diced
Dressing
- 2 tbsp Olive Oil
- 1 tbsp Lemon Juice
- 1 tbsp Red Wine Vinegar
- 1 tsp Maple Syrup or Agave
- 1 tsp Garlic minced
- ¼ cup Red Onion finely diced
- ¼ cup Fresh Cilantro diced
- ¼ cup Fresh Parsley diced
- ½ tsp Dried Oregano
- ¼ tsp Salt or to taste
- ¼ tsp Black Pepper or to taste
Instructions
- In a medium mixing bowl whisk together olive oil, lemon juice, vinegar, maple syrup, garlic, onion, cilantro, parsley, oregano, salt, and pepper.
- In the same bowl add avocado, cucumber and cherry tomatoes. Gently toss ingredients well together.
- Serve chilled.
