Ingredients
  

  • 2 medium Avocados chopped
  • 1 cup Cucumber diced
  • 1 cup Cherry Tomatoes diced

Dressing

  • 2 tbsp Olive Oil
  • 1 tbsp Lemon Juice
  • 1 tbsp Red Wine Vinegar
  • 1 tsp Maple Syrup or Agave
  • 1 tsp Garlic minced
  • ¼ cup Red Onion finely diced
  • ¼ cup Fresh Cilantro diced
  • ¼ cup Fresh Parsley diced
  • ½ tsp Dried Oregano
  • ¼ tsp Salt or to taste
  • ¼ tsp Black Pepper or to taste

Instructions
 

  • In a medium mixing bowl whisk together olive oil, lemon juice, vinegar, maple syrup, garlic, onion, cilantro, parsley, oregano, salt, and pepper.
  • In the same bowl add avocado, cucumber and cherry tomatoes. Gently toss ingredients well together.
  • Serve chilled.
