- 2 medium Avocados chopped
- 1 cup Cucumber diced
- 1 cup Cherry Tomatoes diced
Dressing
- 2 tbsp Olive Oil
- 1 tbsp Lemon Juice
- 1 tbsp Red Wine Vinegar
- 1 tsp Maple Syrup or Agave
- 1 tsp Garlic minced
- ¼ cup Red Onion finely diced
- ¼ cup Fresh Cilantro diced
- ¼ cup Fresh Parsley diced
- ½ tsp Dried Oregano
- ¼ tsp Salt or to taste
- ¼ tsp Black Pepper or to taste
In a medium mixing bowl whisk together olive oil, lemon juice, vinegar, maple syrup, garlic, onion, cilantro, parsley, oregano, salt, and pepper.
In the same bowl add avocado, cucumber and cherry tomatoes. Gently toss ingredients well together.
Serve chilled.
