Vegan Ground Meat (Soya Chunks)

Trying to cook more vegetables? This vegan ground meat can be added to many dishes as a healthy yet tasty meat alternative. It resembles meat in both taste and texture. To create this likeness, we’ll be using soya chunks, which have a similar quality to tofu. Soya chunks quickly absorb flavors from cooking and taste great. They are high in vegetable protein and can easily be found online or at South Asian grocery stores.

The preparation for this recipe is very simple. First, we’ll soak the soya chunks. Next we’ll blend the ingredients. Finally, we’ll let it simmer. And that’s it!
You can add this plant-based ground meat to salads, bowls, tacos, pasta dishes, stuffed vegetables, soups, wraps, and more. It’s the perfect recipe for people who want to eat more plants, or want their kids to.

Vegan Ground Meat (Soya Chunks)
Ingredients
- 2 cups Dried Soya Chunks
- Water for soaking
- 1 cup Red Onion chopped
- 1 cup Roma Tomatoes chopped
- 5 cloves Garlic whole
- 1 tsp Italian Dried Herbs
- 1 tsp Smoked Paprika
- 1 tbsp Soy Sauce
- ½ tsp Salt or to taste
- 1 tbsp Oil
Instructions
- Soak soya chunks in water for 10 minutes or until soft. Then squeeze the water out of them, as you would a sponge.
- In a food processor add soya chunks, onion, tomato, garlic, Italian dried herbs, smoked paprika, soy sauce and salt. Blend until it resembles uncooked ground chicken.
- Heat a medium size pan over medium heat. Add oil and the mixture and cover with a lid for 2 minutes.
- Reduce heat to low-medium and let simmer for 25 minutes. Stir occasionally.
