Vegan Creamy Scalloped Potatoes

This creamy scalloped potatoes recipe is not just vegan but also gluten-free. It’s rich and packed with good flavors from garlic, caramelized onions and fresh thyme. This is a true comfort food recipe for the holiday season. These vegan scalloped potatoes are creamy, tender, flavorful and dreamy.

I tinkered with this recipe a few times over the years yet never felt 100% satisfied. But this year I added garlic, fresh thyme and my new cheese sauce. This completed the recipe and made it most pleasurable and satisfying.

This recipe is very simple. We will first sauté onion and garlic in (vegan) butter, then create our dairy-free & gluten-free cheese sauce. Next we’ll create a layer of delicate sliced potatoes, fried onions and cheese sauce along with a layer of your additional choice of dairy-free cheese. We’ll bake this for one hour, while we finish our laundry or watch an episode of a new favorite show.

Vegan Creamy Scalloped Potatoes
Ingredients
- ¼ cup Vegan Butter
- 1 large Yellow Onion halved and thinly sliced
- 10 cloves Garlic minced
Sauce
- 1 cup Cashews
- Water to boil
- 2 cups Plant-Based Milk
- ¼ cup Nutritional Yeast
- 2 tsp Lemon Juice
- 1 tsp Garlic Powder
- 1 tsp Black Pepper or to taste
- 1½ tsp Salt or to taste
Assemble
- 1½ lbs Golden Potatoes thinly sliced
- 4 oz Vegan Cheese (e.g., cheddar)
- Fresh Thyme
Instructions
- Heat a skillet over medium heat. Add butter, then the onion and sauté for 5 minutes or until softened.
- Add garlic and continue sautéing until slightly brown. Set aside.
Sauce
- Boil cashews for 15 minutes and drain.
- In a blender add cashews, milk, nutritional yeast, lemon juice, garlic powder, black pepper and salt. Blend until creamy smooth.
Assembling and Baking
- Preheat the oven to 400 F.
- Layer half of potato, onions, thyme and sauce in a 9” baking dish.
- Spread choice of vegan cheese, then cover by repeating the same layer of potatoes, onion, thyme and sauce. Bake for 1 hour.
