Vegan Creamy Scalloped Potatoes

These vegan scalloped potatoes are packed with great flavors from garlic, caramelized onions and fresh thyme.

Ingredients
  

  • ¼ cup Vegan Butter
  • 1 large Yellow Onion halved and thinly sliced
  • 10 cloves Garlic minced

Sauce

  • 1 cup Cashews
  • Water to boil
  • 2 cups Plant-Based Milk
  • ¼ cup Nutritional Yeast
  • 2 tsp Lemon Juice
  • 1 tsp Garlic Powder
  • 1 tsp Black Pepper or to taste
  • tsp Salt or to taste

Assemble

  • lbs Golden Potatoes thinly sliced
  • 4 oz Vegan Cheese (e.g., cheddar)
  • Fresh Thyme

Instructions
 

  • Heat a skillet over medium heat. Add butter, then the onion and sauté for 5 minutes or until softened.
  • Add garlic and continue sautéing until slightly brown. Set aside.

Sauce

  • Boil cashews for 15 minutes and drain.
  • In a blender add cashews, milk, nutritional yeast, lemon juice, garlic powder, black pepper and salt. Blend until creamy smooth.

Assembling and Baking

  • Preheat the oven to 400 F.
  • Layer half of potato, onions, thyme and sauce in a 9” baking dish.
  • Spread choice of vegan cheese, then cover by repeating the same layer of potatoes, onion, thyme and sauce. Bake for 1 hour.

Notes

*Note: Place a sheet pan under the baking pan to avoid cheese sauce spills.
