Assemble

(e.g., cheddar)

Instructions
Heat a skillet over medium heat. Add butter, then the onion and sauté for 5 minutes or until softened.
Add garlic and continue sautéing until slightly brown. Set aside.
Sauce
Boil cashews for 15 minutes and drain.
In a blender add cashews, milk, nutritional yeast, lemon juice, garlic powder, black pepper and salt. Blend until creamy smooth.
Assembling and Baking
Preheat the oven to 400 F.
Layer half of potato, onions, thyme and sauce in a 9” baking dish.
Spread choice of vegan cheese, then cover by repeating the same layer of potatoes, onion, thyme and sauce. Bake for 1 hour.
Notes
*Note: Place a sheet pan under the baking pan to avoid cheese sauce spills.
