This vegan stuffed zucchini boat recipe is one of my favorites during the holiday season. These stuffed zucchini boats are low-carb, gluten-free, high-protein, healthy and flavorful. I prefer to bake food during the busy holiday season to save on time, which I’d rather spend with friends and family. Not a fan of zucchini? Give this one a try and you won’t be disappointed. It’s creamy, juicy, filling, loaded with flavors and very satisfying. This recipe pairs great with zesty garlic couscous or this easy tossed salad.

Growing up, my mother often made a mashed zucchini recipe. It was great, and for a long time I thought it was the only way to make zucchini. In my adult life, I came to realize there is so much more you can do with it. At first, I would roast and grill zucchini with light seasonings and serve it with a dipping sauce. My brother and his wife loved it so much that they began asking me for the recipe. That made me think about what else I can do with zucchini. I then started experimenting with zucchini in soups, warm salads and even sautéing it as a side. After understanding the true texture of zucchini, I realized that I can stuff it with my walnut meat recipe, add sour cream for a creamy texture and make it into a perfect meal.

Walnut meat requires only a handful of ingredients. You simmer them for a few minutes and they turn into a high-protein, rich and savory meat substitute. You can prepare this plant-based protein days in advance, then assemble and bake the zucchini when ready for your meal. And you can easily substitute your choice of protein and the recipe will remain essentially the same. Feel free to use your choice of cheese as well; this recipe will still turn out great.

Stuffed Zucchini Boats

Ingredients
  

  • 2 Zucchini
  • a drizzle Olive Oil
  • a sprinkle Salt
  • a sprinkle Pepper

Stuffing

  • 2 cups Walnut Meat
  • 4 oz Vegan Smoked Gouda Cheese or choice of any cheese

Garnish

  • Vegan Sour Cream
  • Fresh Chives or Spring Onions

Instructions
 

  • Follow this walnut meat recipe.
  • Preheat the oven to 400 F.
  • Slice zucchini in half length wise and scoop out seeds.
  • Place zucchini halves on a baking sheet pan and rub them completely with olive oil. Sprinkle salt and pepper and bake for 15 minutes, then remove from the oven.
  • Stuff zucchini halves with walnut meat and top them with cheese and bake for another 15 minutes. Remove from the oven and let them cool down for about 5 minutes.
  • Top each piece of stuffed zucchini with vegan sour cream and other garnishes. Serve hot.

Notes

Some new ovens have very high intense heat. Check periodically that dish does not burn.
Feel free to use your choice of protein and/or cheese. 
Pairs great with zesty garlic couscous or this easy tossed salad.
