These mini orange coconut muffins have incredible flavors of orange and coconut. The combination of these two ingredients makes them truly delicious. They are cute, moist, sweet and dairy-free. Because these bites are so small and the flavors are so great, eating two or more in a single sitting feels just fine. My favorite detail from this recipe is the inclusion of coconut flakes, which make these muffins chewy, moist and more flavorful.

These muffins can be refrigerated or stored at room temperature. They will stay fresh for days. If you’re looking to keep an easy dessert, breakfast or snack on hand, these dairy-free mini treats can be made in advance.

This recipe requires only one mixing bowl. First, we’ll soak ground chia seeds. Then we’ll combine the rest of the wet ingredients. Next we’ll add in the dry ingredients and gently mix everything together. We will then pour this mixture into a mini muffin baking pan and bake it. Give this one a try. It’s easy and delicious!

Ingredients
  

  • 1 Orange zested & juiced
  • 1 tbsp Chia Seeds grounded
  • 3 tbsp Soy Milk
  • 3 tbsp Almond Oil or Melted Vegan Butter
  • 1 cup All Purpose Flour
  • ½ tsp Baking Soda
  • ¼ tsp Salt
  • tsp Cinnamon Powder
  • ¼ cup Coconut Flakes
  • cup Cane Sugar

Instructions
 

  • Preheat oven to 350 F.
  • In a small mixing bowl add ground chia seeds, orange zest and juice and whisk it. Let it sit for a few minutes until it forms into a thick paste.
  • Add soy milk and almond oil and mix it together.
  • In the same bowl, add flour, baking soda, salt, cinnamon powder, coconut flakes and sugar. Gently mix everything together.
  • Pour this mixture into a mini muffin baking pan and bake for 25 minutes. If needed, bake for another 5 minutes.
