Instructions
Preparing Chickpea Tuna
Pulse chickpeas in a food processor (do not blend all the way; it should not be a paste) or simply mash them in a mixing bowl with a fork.
Add red bell pepper, onion, garlic, herbs, lemon juice, capers, dijon, mayonnaise, salt and pepper. Mix well together.
Making Chickpea Tuna Wraps
Lay tortilla flat; add one cup of chickpea tuna in the middle along with fresh cut cucumber and carrots. Invert the left and right-hand side and roll it up. Use water on edges to seal the wrap.
Heat a flat pan on medium heat then place wrap in the middle. Flip the wrap occasionally until all sides are golden brown.
Repeat with second tortilla.
Cut wraps in half and serve immediately.
