Salad
- 1½ cups Cabbage thinly sliced
- ¼ cup Scallions diced
- ½ Chili sliced
- 2 tbsp Fresh Mint diced
- ¼ cup Fresh Cilantro chopped
- ½ cup Tomato diced
- ½ cup Mango diced
- 1 tbsp Lime Juice
- ¼ tsp Salt
Dressing
- 1 tbsp Olive Oil
- 4 cloves Garlic minced
- ¼ tsp Dried Crushed Red Peppers
- ¼ tsp Turmeric
Garnish
- 1 tsp Sesame Seeds toasted
- 2½ tbsp Peanuts crushed & toasted
Combine all salad ingredients in a mixing bowl. Mix well and set aside.
Heat a pan over medium heat. Add oil and garlic and sauté until light brown.
Add dried red pepper and turmeric. Turn off the heat and keep stirring.
Add dressing to salad and mix well.
Add garnishes and serve immediately!
